SummerTime is Salad Time

Summertime is salad time! What I love about summer are all the fresh and delicious fruits and vegetables that are available from local farms and our own backyard gardens. During the hot summer months, it’s fun and easy to BBQ some grilled chicken or locally caught fish and combine it with a healthy salad loaded with vitamins and antioxidants.

Peach and Cucumber Herb Salad is Perfect for Summertime!

One of my favorite salads is a Peach and Cucumber Salad with fresh herbs. Peaches are sweet and loaded with insoluble fiber which helps your digestion. Peaches also contain compounds that may lower your risk of heart disease and lower your cholesterol and blood pressure. Peaches are also great to keep your skin looking young as they help your skin retain moisture. They may also help protect you against some types of cancer. Due to their high antioxidant content, they also boost your immune system!

Cucumbers are also packed with antioxidants. They are low in calories and high in vitamins and minerals. They can help you lose weight as they are high in fiber and fluid while being low calorie. They also very hydrating so it helps your skin stay soft. They are also high in potassium which helps prevent high blood pressure.

Combining these two fabulous fruits together to make a delicious and healthy salad is simple and everyone in the family will love it! When you add some fresh herbs like basil and mint, the taste is out of this world!

Peach and Cucumber Herb Salad:

2 pounds of mixed heirloom cucumbers, sliced into thick wedges and rounds

1 English cucumber, halved lengthwise, sliced crosswise

Kosher Salt

2 pounds yellow peaches, sliced into wedges

4 oz. crumbled feta cheese

Black pepper, fresh basil, and fresh mint


1 shallot finely chopped

1 lemon

2 Tbs white wine vinegar

What To Do:

Just toss peaches and cucumbers together. Add feta, and season with kosher salt and some pepper. Top salad with fresh herbs and drizzle with homemade vinaigrette!
