Blueberries are nature’s summertime superfood. They are beautiful to look at and delicious to eat. They are also one of the most nutrient-dense foods. They are low in sugar, high in fiber and loaded with vitamins.

One cup of blueberries is 85 calories and contain 25% of the recommended daily intake of Vitamin C which is necessary for the repair and regeneration of our tissues. They also contain 36% of the recommended daily intake of Vitamin K which improves bone density, blood clotting and heart health.

Blueberries contain fewer carbohydrates, calories, and sugar than most other fruits such as bananas, grapes, and cherries. However, the biggest difference between blueberries and other fruits is the number of antioxidants that they contain. They contain anthocyanin which is the antioxidant that gives blueberries their gorgeous blue color. This antioxidant protects the body’s cells from the damage caused by free radicals which are linked to aging and cancer.

There has been a lot of research done on antioxidants and the anthocyanin in blueberries has been shown to help reduce the risk of heart disease, high blood pressure, diabetes, cancer, and cognitive decline. It has also been found to help prevent eye diseases such as macular degeneration.

Blueberries are a very versatile fruit. They can be eaten alone as a snack or they can be added to breakfast foods such as oatmeal or added to a lunch salad. They are also fantastic for dessert! Here is my favorite healthy blueberry crisp recipe that is easy to prepare.

What You Need:

3 cups of fresh blueberries

1 cup rolled oats

1/2 cup slivered almonds

1/4 whole wheat almond or wheat flour

1/2 tsp cinnamon

2 tbsp unsalted melted butter

1/4 cup maple syrup

For garnish: 1/4 cup plain Greek yogurt and maple syrup

What To Do:

  1. Preheat oven to 350.
  2. Place blueberries into glass baking dish.
  3. Combine oats, cinnamon and flour into a bowl for topping. Add melted butter and syrup. Mix until dry ingredients are coated and spread on top of blueberries.
  4. Bake 45-55 minutes until blueberries start to bubble.
  5. Mix Greek yogurt and maple syrup and drizzle over the blueberry crisp.
